Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked rice (white or brown)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn (fresh, frozen, or canned)
  • 1 teaspoon taco seasoning
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste
  • Tortilla chips or tortillas for serving

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC).
  2. In a large mixing bowl, combine the shredded chicken, black beans, cooked rice, diced tomatoes, corn, taco seasoning, and sour cream. Season with salt and pepper to taste.
