Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked rice (white or brown)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn (fresh, frozen, or canned)
  • 1 teaspoon taco seasoning
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste
  • Tortilla chips or tortillas for serving

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC).
  2. In a large mixing bowl, combine the shredded chicken, black beans, cooked rice, diced tomatoes, corn, taco seasoning, and sour cream. Season with salt and pepper to taste.
  3. Spread half of the mixture in a greased 9×13 inch baking dish. Sprinkle half of the shredded cheese on top.
  4. Layer the remaining chicken mixture on top and finish with the remaining cheese.
  5. Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  6. Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired.
