Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) enchilada sauce
  • 8 corn tortillas, cut into strips
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Beef: In a large skillet over medium heat, cook the ground beef with chopped onion and minced garlic until the meat is browned. Drain excess fat if necessary.
  3. Add Seasonings: Stir in the chili powder, cumin, salt, and pepper. Cook for an additional 2 minutes.
  4. Layer the Casserole: In a greased 9×13 inch baking dish, spread a layer of enchilada sauce on the bottom. Add half of the tortilla strips, followed by half of the beef mixture, half of the black beans, and half of the cheese. Repeat the layers, finishing with the remaining cheese on top.
  5. Bake: Cover with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  6. Serve: Garnish with fresh cilantro if desired and serve hot.
